How was your Christmas this year? Here we had lots of fun with our house full of dear people, delicious food and our still quite new addition to the family - baby Eva.
It was nice to spend our first Christmas in this house and witness a bit more up close the Dutch traditions. While we were all having a gigantic dinner and opening our presents at 00h00 on December 24th all our neighbors were already sleeping and getting ready to party on the following day. That's how they do it! Something quite nice as well was exchanging Christmas postcards with our neighbors. It's fun how such small gestures can keep us more close to each other.
I am writing this post with Eva wrapped up in our baby-wrap while I'm sitting uncomfortably on the couch. I guess after all the visits this month she is feeling a bit needy as she only wants to lay down on my or David's chest. Well, can't complain much since I have my private heater and can at least get something done at the same time.
And by the way guys, this will be my last post of the year! Another year flew by... I may sound like an old lady but each year is passing faster and faster. Anyway, it was an amazing year for sure!
Enough of chit-chat and let's get on to the subject.
As many of you asked a bunch of times (and I am not exaggerating here) I finally bring you the recipe of the famous cheesecake. Fell free to use anything you like for the topping. Sometimes I use lemon curd and fresh blueberries, other times pineapple mousse, strawberry jam, but it is also good with a variety of other things. Just be creative!
I learned this recipe from a very dear person and I never wrote it down. A couple of years later I attempted to do it from what I could remember and here I am now sharing it with you. I hope you like it!
First things first, so let's start from the bottom.

To create the base you'll need:
  • 1 package of cookies
  • Margarine
  • A can of condensed milk
  • 2 packages of cream
  • 7 gelatin sheets
  • 250gr of Mascarpone

Grind the cookies and mix them with the margarine. Keep adding the margarine while mixing it all up until it reaches a consistency similar to wet sand from the beach.

Put the mixture in the form and press it to create the base. You'll notice it has the right consistency if there are no pieces falling apart. When ready, put it in the fridge.

Time to whip that cream. Reserve.

In another bowl mix the condensed milk with the mascarpone. Whisk until you get a creamy consistency, then take a bit from this mixture and heat it in the microwave for 30 seconds on 1000W, or if you're like me and don't have a microwave just use a pan to heat it up.

Put the gelatin sheets in cold water and once they are soft add them to the heated mixture and stir. When it is all mixed up add the heated mixture to the rest. Add the whipped cream and gently mix it all together. Pour the mixture on top of the base. Take it to the fridge for about 4 hours (maybe less) and, before serving, add the topping.
This time I used blueberry and strawberry jam and added some physalis for decoration. But you can literally add anything you like.
