I don't really have a sweet tooth. I think I'm more of a salty kind of person. But from time to time I feel like having something sweet. And who doesn't, right?
Specially during cold and rainy weekends. It is just the perfect time to spend a couple of minutes preparing something that will make your whole house smell comfy and warm, and taste amazing in your mouth. Because that's important too!
This time I decided to make a super easy, but delicious, pineapple cake. I love how simple this recipe is to prepare and yet how delightful it feels in every bite. While the outside stays kind of crunchy, the inside gets fluffy and humid with a bunch of pineapple junks.

You will need:
  • 125 grams of yogurt
  • 3 eggs
  • 250 grams of sugar
  • 375 grams of self-raising flour
  • 125 ml of sunflower oil
  • 1 can of pineapple junks or, if you prefer, fresh pineapple. It's even better.
  • As much as you want of caramel or maple syrup, just because you're the Boss!

Now, let's prepare it, shall we?
Start by pre-heating the oven at 180ºC/356F.
Whisk the eggs with the sugar until it reaches a creamy consistency. Start adding the flour little by little while mixing everything. Gently combine the oil and the yogurt into the mixing and when it seems homogeneous add the pineapple.

Grease the cake mold and distribute some flour on top of it so that it becomes easier to take the cake out of the mold later on.

Now, if you want, it's time to add a bit of caramel or maple syrup on top and take it to the oven.

After 40 minutes, take the cake out of the oven and wait about 5 minutes before unmolding.
Your house, or at least your kitchen, should smell like heaven by now! While waiting for it to cool down make some hot tea. It's the perfect combination!
Grab a slice, bring your tea with you, get a cozy blanket, a nice movie and enjoy heaven in the couch! Good luck having just one slice though.
