Hello, I'm Inês and I am pizza addicted. In fact, we all are here at my house, and you'll probably be too after trying out this recipe. Just saying!
What is it about pizza that makes it so good? I swear I could eat it every day for the rest of my life and be happy (along with sushi). But enough of deviations.
David (aka my handsome boyfriend) likes to adventure in the kitchen from time to time. And the funny difference between him and I is that, for the most part, I'll cook for us to eat and that's that. Whilst he will make some of his recipes over and over until they can't get any better.
After mastering the bolognese recipe (planning on sharing that with you later on) he decided to explore the pizza world.
We usually order (read it: very frequently) pizza, and one day he decided to search for Italian pizza recipe. The original recipe that we follow made us even more addicted to pizza. Actually, as I'm writing this post, my stomach is growling and I'm drooling all over the keyboard. Long story short - We're having pizza for dinner. Again!
I know you're also a pizza lover, otherwise, why would you be reading this. So without further ado, let's get into it!

For a Classic Margherita you'll need:
  • 500 grams of strong flour
  • 7 grams of dry yeast
  • Salt
  • 325 ml of warm water
  • Tomato sauce (we use San Marzano which is delicious)
  • Freshly grated Parmigiano Reggiano
  • Mozzarella
  • Fresh Basil
  • Olive oil
  • Semolina

In a bowl mix the flour with one teaspoon of salt. In a different recipient, mix the dry yeast with the warm water and give it a good stir. Combine everything and then start working the dough with your hands until it seems homogeneous. You can add a bit of flour with your hands if the dough is too sticky.

Divide the dough into four equal little balls and put it to rest inside a recipient, covered with semolina. Put some flour on top of the dough and cover the recipient with a damp cloth. It should take about two hours for the dough to double the size and get all fluffy. It gives us so much pleasure to touch it afterward. haha!

Once the dough is all ready, spread some flour on a flat surface and, one by one, work each of your dough balls. With your hands, just spread the dough into a pizza shape, however thick you prefer it. If you make a hole on the dough, take a piece of the dough from the outside and cover it up with it, instead of trying to glue the dough together.

Place some tomato sauce on top of your pizza and add a string of olive oil to give it an extra flavor. You can use any passata di pomodoro that you like. We prefer grinding S. Marzano canned tomatoes at home and use the pure instead, just because we find it tastier that way.

To really enhance the taste, grind some fresh Parmigiano Reggiano cheese on top, then add the mozzarella and the fresh basil leaves. And it's ready to go to the oven.

For a conventional oven, place some parchment paper on top of the oven tray and spread some semolina on it before placing the pizza.

The oven should be pre-heated to 220ºC/428F and it should take 7 minutes for your pizza to be ready for tasting. This, of course, depends on your oven and the thickness of your dough, so just keep an eye. The oven that we have at this house is already pretty old, so we find the need to leave the pizza between 10 to 15 minutes. But, once you see the cheese and the dough getting a brown color, it is ready for you to dive in!
I also love to spread a little bit of garlic powder on top, for an extra spice.

  2. Inês! Como é que eu já te seguia no instagram e só recentemente raparei que tinhas um blog?! :) Tenho que voltar em breve para espreitar mais posts, mas do que vi, gostei muito do conteúdo que publicas, e identifico-me bastante com o teu estilo pessoal.

    Esta receita de pizza veio em muito boa altura! Já fiz pizza caseira algumas vezes, mas a última vez já foi há uns 3 anos e fiquei com imensa vontade de fazer de novo experimentando esta tua receita. Acho que é semelhante a como fazia, apenas com ingredientes diferentes, e nunca usei levedura. Vamos ver como corre. :)
