GINGER + LEMON + POPPY SEEDS = THE BEST LOAF

I've been wanting to try something with poppy seeds for so long. It's that type of things that I somehow forget to add to my grocery's list.
Well here it is. This time I did not forget about it and because I was craving some lemon cake I decided to combine both in this delicious cake/loaf. Needless to say it is amazing with a warm cup of tea!

What you'll need:
  • 2 eggs
  • 1 cup of milk
  • 1 cup of brown sugar
  • 1/2 cup of soften butter
  • 1/3 cup of poppy seeds
  • 2 table spoons of ginger (I used bottled ginger but you can also grind some fresh ginger)
  • 2 cups of wheat flour
  • 1 table spoon of baking powder
  • 1/3 spoon of sea salt
  • Juice of one big lemon
  • 1 table spoon of grated lemon rind

In a large bowl stir the butter and the sugar until it reaches a fluffy consistency. Join the eggs, one at the time, and beat well.
Aside, mix the baking powder with the flour, then join the sea salt, the lemon rind, the lemon juice, the ginger and the milk. Join these ingredients with the butter mixture and combine with the poppy seeds.
Pour the mixture into a greased loaf pan and take it to the pre-heated oven 160ºC/325F for about 40 minutes.
